Our approach to your Cookery Training.
The Gables School of Cookery has an excellent teacher/student ratio, with one to one help for students experiencing difficulty. We are a small personal school and get to know our students well. We help students on the cookery courses with development of their CV’s and discuss career options. We also provide follow up support once students have left our cookery school, offering advice and help with job seeking and circulating incoming vacancies.
Our students develop good practical cookery skills, which they can apply confidently in a range of environments. In addition to clear practical tuition we provide close support with the development of their cooking skills to the standard that you would expect to find in a good restaurant.
Our four week cookery courses are multi-disciplinary and typically have a mixture of yacht, ski chalet, gap year, people wanting to work in hotels/restaurants and those planning to run their own catering businesses. The beauty of this arrangement is that you will be exposed to a wide range of influences.
You may well come on a course intending to work in ski chalet cookery and end up going into yacht cookery. In summary in addition to teaching you to cook to a very high standard the four week cookery course also offers an invaluable way to re-assess your career or business plans.

Learn about us and our backgrounds
Fran Winston has travelled extensively and worked in Hotels in Australia, New Zealand and the United Kingdom where she was a Director of a 50 bed hotel. The hotel had a popular 60 cover restaurant and three large function rooms catering for weddings on most weekends.
Fran holds an Advanced Chef’s Diploma, City and Guilds Professional Cook’s Certificate (Distinction), City and Guilds Guest House Catering and Management, the Royal Institute of Public Health Advanced Health and Food Hygiene Diploma, a Further and Adult Education Teaching qualification and she is also a qualified NVQ Assessor.
During her travels she has attended private cookery schools throughout the world, including the UK, so has plenty of practical experience of what meets students’ needs best. Fran was surprised to learn that few UK cookery schools employed staff holding formal teaching and cookery qualifications. Being able to cook does not mean that you necessarily possess the skills, experience and scientific knowledge to enable you to teach cookery to others! At the Gables we adopt a professional approach to the teaching of cookery.
Fran, who both loves teaching and cooking, derives great satisfaction from the achievements of her students. Our greatest reward is the success of our students, many of whom stay in touch long after they have left the school.
Richard Gabriel is an entrepreneur who has chosen to bring his vast experience to the school. His mother ran a residential nursing home where he and his six siblings grew up and where he developed his love of good home cooked food.
He has experienced a wide variety of cuisines, in many different countries, on his personal and business travels. In addition he has owned restaurants and hotels. Richard has trained to enable him to be an invaluable part of the school’s lecturing team. He spends his time at the school because he chooses to and enjoys developing and helping the many special people that attend.
Chris Winston has a background in human resource management and consultancy. He has joined the team to concentrate on operational systems and marketing. Your initial contact with the school will be with Chris and he will ensure that you have all the information you need so the course is right for you.
A relaxed learning environment
Delivered in our relaxed and homely environment, the courses are intensive, but also practical and fun. Our students get plenty of opportunity for hands-on experience backed up by demonstrations, comprehensive theory and a well researched and presented 500 page course book. Past students call it their bible!
The school offers a purpose built fully equipped kitchen (unlike some ‘schools’ where classes are held in the domestic kitchen), with plenty of working space for each student. Fran has a superb herb garden and other home grown fresh produce is used in the school, plus fresh eggs from the Gables own chickens.
Fran, Richard and Chris own and run the school so it is very personal. We never leave employees solely in charge as we feel it is vitally important that we remain hands on.
Potential students are welcome to visit the school individually or with their families, even when a course is running. You are also encouraged to talk with other students.
We welcome students from 15-80 all of whom will be made to feel at home throughout the course.
We provide shared twin room accommodation on site for the majority of our students. The friendly atmosphere of the school ensures that students develop lasting friendships with those they meet on the course, in fact some even end up working together when they go off into the world.
Our proximity to Bristol with its vibrant nightlife, Cabot Circus and the Mall at Cribb’s Causeway- for shopping , cinemas and other attractions makes the Gables a popular choice for students.
Course fees include accommodation, breakfast, lunch and dinner. You do not need to bring any special equipment with you. We will provide you with everything you need to enable effective learning.
Finally, we offer our students free use of a nearby country house hotel’s luxurious four star sport and fitness centre (including fabulous pool).
