Happy Easter

With it being Easter my thoughts are on eggs!! So, I thought it might be useful to share a few egg (non chocolate variety) tips with you. So here they are:

• To centre the yolks in boiled eggs, stir the eggs while they are coming to the boil

• To prevent the grey ring which can sometimes form around the yolk of hard boiled eggs, run the cooked eggs under cold water as soon as they are cooked and then crack the shells all over immediately

• To test an uncooked egg for freshness – put the egg (still in its shell of course), in to a bowl of water. A fresh egg will stay at the bottom of the bowl and an older egg will float

 • The whites of eggs will whip more readily if a pinch of salt is added to them
