Chalet Cookery Course
As you look forward to a winter season as a chalet host at a ski chalet resort our 4 week chalet cookery course will help you to succeed. Be prepared to learn specific chalet cookery techniques, tips, and an awareness of some of the challenges you will face.
We are here to take you from the basic level of cookery to quite advanced dishes towards the end of the chalet cookery course. Working in a chalet presents unique challenges for the chalet cook and requires a well informed preparation. We aim to develop your skills in these areas so you will become more confident and effective. Our student feedback reveals how others have benefited from this.
As you may be cooking for the same guests for up to two weeks your chalet cookery menu planning skills must be top notch. You will want to avoid repetition of the same dishes and the time you spend on planning may make all the difference. Remember that ingredients available in the UK are different to those you will find in a chalet resort.

Chalet cookery is also dependant on your ability to produce dishes that exhibit a great variety of colours and flavours. We cover how to source and use ingredients, organisational skills such as budgeting and stock control, client liaison including handling complaints and cooking at altitude where appropriate. We also include a session on matching food with wine. In addition housekeeping skills such as cleaning and bed making are also covered where required.
The chalet cookery course syllabus also covers dining etiquette including formal and informal table laying and hygiene. We are a Royal Institute of Public Health and Hygiene registered training and examination centre for the Foundation Food Hygiene Certificate.
We have been working with ski chalet companies for seven years both in the UK and in the European ski resorts and we help our students to source employment when required. Fran also works as an assessor on behalf of the ski chalet companies to determine whether ski chalet chef applicants can cook to the high standards required so you know your training will be relevant.

Course fees include accommodation, breakfast, lunch and dinner. You do not need to bring any special cookery equipment, you will be provided with everything you need to enable effective learning. This includes a well researched and presented 500 page course book (yours to keep and make notes in). Past students call it their bible!
