We are here to take you from a basic level of cookery to advanced dishes towards the end of the course. Working in a chalet presents unique challenges for the chalet cook and requires a well informed preparation. We aim to develop your skills in these areas so you will become more confident and effective. Our student feedback reveals how others have benefited from our course.
As you may be cooking for the same guests for up to two weeks your chalet cookery menu planning skills must be top notch. You will want to avoid repetition of the same dishes and the time you spend on planning may make all the difference. Remember that ingredients available in the UK are different to those you will find in a chalet resort.
Chalet cookery is also dependant on your ability to produce dishes that exhibit a great variety of colours and flavours. You will appreciate working in our professionally equipped kitchen where you can try out new methods and dishes, use a wide variety of kitchen utensils, etc. Be sure to view our virtual tour of our course kitchen.
We cover how to source and use ingredients, organisational skills such as budgeting and stock control, client liaison including handling complaints and cooking at altitude. We also include a session on matching food with wine. In addition housekeeping skills such as cleaning and bed making are also covered.
The chalet cookery course syllabus also covers dining etiquette including formal and informal table laying and hygiene. We are a Royal Society for Public Health registered training and examination centre for the Foundation Food Hygiene Certificate which you will undertake whilst on the course.
We have been working with ski chalet companies for over 15 years both in the UK and in the European ski resorts and we help our students to find jobs when required.

Our approach to your Cookery Training
The Gables School of Cookery has an excellent teacher/student ratio, with one to one help for students experiencing difficulty. We are a small personal school and get to know our students well. We help students on the cookery courses with development of their CV’s and discuss career options. We also provide follow up support once students have left our cookery school, offering advice and help with job seeking and circulating incoming vacancies.
Our students develop good practical cookery skills, which they can apply confidently in a range of environments. In addition to clear practical tuition we provide close support with the development of their cooking skills to the standard that you would expect to find in a good restaurant.
Our four week cookery courses are multi-disciplinary and typically have a mixture of yacht, ski chalet, gap year, people wanting to work in hotels/restaurants and those planning to run their own catering businesses. The beauty of this arrangement is that you will be exposed to a wide range of influences.
You may well come on a course intending to work in ski chalet cookery and end up going into yacht cookery.
